Kitchen Sink Guacamole

Guacamole containing everything but the kitchen sink. It might look a little odd but the taste is addictive.
Ingredients:
2 or 3 avocados, peeled, pitted and coarsely chopped
1 small cucumber peeled and seeded, coarsely chopped
5 green onions , sliced
1 small tomato, diced
2 or 3 pickled pepperoncini or greek peppers, chopped, plus a tablespoonful of the brine
1 or 2 jalapeno peppers, minced
2 or 3 boiled eggs, chopped
2 or 3 cloves garlic minced or pressed
salt to taste, about a teaspoon usually
juice of half a lime ( a teaspoon or two of bottled juice may be substituted) do not omit as it helps keep the dip from turning brown as avocados are apt to do.
some like this with a little chili powder or cumin added also.
Directions:
1. Mash the avocado and cucumber together until only small lumps remain.
2. Stir in remaining ingredients.
3. If not serving immediately, cover with plastic wrap pressed onto the surface and refrigerate. Avocados tend to turn brown when exposed to air but it won't affect the taste. If the surface of the dip has turned brown while it tis chilling, just stir well before serving.
4. Serve with tortilla or other chips. Nacho Cheese Doritos are very good with this dip.
