Ingredients:

Directions:

  1. Preheat oven to 450°F and line a baking sheet with parchment paper.
  2. Toss eggplant and zucchini cubes with 1 tbsp oil, salt and pepper to taste, spread on the sheet.
  3. Roast, stirring once, about 40 minutes.
  4. Heat remaining tbsp of oil in a non-stick skillet and saute the garlic and shallot for 2 minutes.
  5. Stir in red wine, tomatoes, red pepper, celery, carrots, espresso and cocoa powder.
  6. Cook, stirring occasionally, 30 minutes, then add eggplant, zucchini and chocolate.
  7. Cook, stirring, until chocolate is melted.
  8. Pour into a large serving bowl and add vinegar, raisins, sesame seeds, cacao nibs and parsley, tossing well.
  9. Serve warm or room temperature.
