I found a recipe on for a low fat breakfast bar, and changed it up a bit to make it more like a NutriGrain bar since my kids like those. It turned out pretty good. It's been years since I ate a NutriGrain bar, so I'm not quite positive how close they are though. The recipe calls for 1 cup brown sugar, which I found a little sweet once you included the jam. Despite it having 3 banana's in it, I didn't find it had a strong banana flavour at all.
Ingredients:
1 1/2 cups whole wheat flour or 1 1/2 cups spelt flour
1 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon clove
1/2 teaspoon ginger
1 teaspoon cinnamon
1/2 cup applesauce
1 cup brown sugar
1 egg
3 medium mashed bananas
1 1/2 cups old-fashioned oatmeal
1/2 cup walnuts, chopped (optional)
1/4 cup raisins (optional)
1 cup jam
water (if required)
Directions:
1. Grease a 13x9 pan.
2. Preheat over to 425.
3. Mix all the wet ingredients together except the jam and water.
4. Add all the dry ingredients.
5. Pour about 2/3 of the mixture into the pan.
6. Heat the jam up in the microwave to make it slightly runny. If it's to thick the spread on the batter, then add a bit of water to it to make it thinner.
7. Pour the jam over the batter and spread it out evenly.
8. Gently pour the rest of the batter over the jam mixture and smooth out over top of the jam.
9. Bake for 20 minutes.
10. Allow to fully cool before trying to cut it.
