Here is a simple recipe that goes wonderfully with chicken as a light drizzle or a dipping sauce.
Ingredients:
1 1/4 cups coconut milk
3/4 cup smooth peanut butter
3 tablespoons fish sauce
1 tablespoon soy sauce
2 1/2 tablespoons minced ginger
3 tablespoons brown sugar
1 teaspoon crushed red pepper flakes
Directions:
1. Combine all ingredients in a food processor until smooth. Refrigerate and can be kept up to one week.
