Kim's Cinnamon Honey Cakes

These cakes are sweet and good for you! What more could you want?
Ingredients:
2 cups whole wheat flour
1 cup honey
3 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1 1/4 teaspoons salt
2 eggs
1 cup buttermilk
1/3 cup vegetable oil
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1 tablespoon honey
3 tablespoons vegetable oil
Directions:
1. In a mixing bowl, combine the flour, honey, baking powder, cinnamon and salt.
2. In another bowl, combine the eggs, buttermilk, oil, and vanilla. Stir mixture into dry ingredients until smooth.
3. Place one spoonful of batter into each cup of a greased muffin tin.
4. In a small bowl, combine the cinnamon, honey, and vegetable oil to create the cinnamon swirl mixture.
5. Drizzle a few drops on swirl mixture on top of each muffin cup batter and then use a knife to create the swirl. (Some of the swirl mixture might not be used).
6. Add another spoonful of muffin batter on top of the swirled muffin batter.
7. Bake at 350°F for about 25 minutes or until a toothpick inserted near the center comes out clean.
8. Let cool and enjoy!
