Coolies that are a great sub for oatmeal. The recipe makes 44-1 oz cookies so a serving is two cookies-perfect with a glass of milk and a piece a fruit for 3 carb servings.
Ingredients:
1/2 cup flour, whole wheat
3 cups oatmeal
1/2 cup wheat germ
1/4 cup cinnamon
1 tsp baking soda
2 eggs
1 tsp vanilla
1 cup unsweetened applesauce
1/2 cup brown sugar
1 cup raisins or craisins
1 cup pecans
Directions:
1. Combine eggs, applesauce, vanilla, and sugar.
2. mix flour, wheat germ, cinnamon, and soda and mix in.
3. add craisins and pecans.
4. add oatmeal one cup at a time
5. bake at 375 for 10 minutes
