Kildare's Jameson Chicken Wings

Ingredients:
4 tablespoon(s) cajun seasoning
1/4 teaspoon(s) cayenne pepper
4 cup(s) franks red hot sauce
1 clove(s) garlic
1 tablespoon(s) ground thyme
1/4 cup(s) honey
10 pound(s) jumbo chicken wings
1 medium chipotle pepper
3/4 cup(s) red wine vinegar
1/4 ounce(s) tabasco
6 ounce(s) whiskey-preferably jameson
8 ounce(s) yuengling lager
Directions:
1. Prepare Chicken Wings
2. Toss wings or strips of skinless chicken breast with Vinegar and 2 Tbsp Cajun seasoning.
3. Transfer to 3 sheet trays, making sure not to overlap the wings/strips.
4. Bake in oven at 350 degrees for 30 minutes.
5. Remove and chill for 15 minutes.
6. Prepare Sauce:
7. Combine all remaining ingredients and bring to a boil.
8. Simmer for 10 minutes and puree.
9. Chill and reserve sauce.
10. Finish:
11. After sauce has been chilled, toss 1 oz. of sauce for every 10 wings/strips.
12. Transfer to a grill and cook for 45 seconds on each side. Enjoy!
