This is a soft cookie with a great kick. You may want to adjust the cayenne pepper amount according to your degree of heat tolerance! I like it hot!! This recipe comes for 'Key Lime Pie' A Culinary Mystery by Josi S. Kilpack. I have increased the cayenne pepper to my liking.
Ingredients:
1 cup butter
3/4 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour
2 1/2 cups quick oats
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon clove
1/2 teaspoon ground ginger
1 teaspoon cinnamon
1 teaspoon cayenne pepper
1 tablespoon hot water
1 1/2 cups craisins
1/2 cup white chocolate chips
1/2 cup chopped nuts walnuts or 1/2 cup pecans
Directions:
1. Heat oven to 400 degrees F.
2. Add water to craisins in small saucepan and heat over stove burner allowing craisins to become plump. Take off burner and allow to cool.
3. Cream butter and sugars together.
4. Mix dry ingredients and spices together. (Adjust cayenne pepper to taste - 1 teaspoon supplies a good amount of heat, you may want to start with a lesser amount.)
5. Add to butter mixture in 1/2 cup portions.
6. Add craisins, chocolate chips and nuts.
7. Use a 1’ scoop and place on cookie sheet covered in parchment paper. Bake 7 to 10 minutes do not over bake.
8. Allow cookies to cool 2 minutes before moving them to cooling rack.
