I love to throw this together as a treat for my husband after a hard day. I never measure, but after a long day of painting yesterday, I made my best batch yet, and am being prodded to write it down to replicate many times to come. Read more . Ingredients:
6 apples, (i used 3 gala and 3 granny smith) roughly peeled, cored and sliced into 8 segments.
juice of half a lemon
2 rounded t of splenda brown sugar
2 rounded t of whole wheat flour
2 sticks of cinnamon
1 clove
1 t cardamom seeds (the little dark bits that come out of green pods)
**topping
2 small handfulls raw whole oats
2-3 rounded t of splenda brown sugar
2/3 stick of butter, cold and cut in pieces
3 rounded t whole wheat flour
oil to grease baking pan (i use coconut oil)
Directions:
1. Preheat oven to 350 F
2. After peeling, coring & cutting the apples, put them in a large bowl & toss with lemon juice.
3. Combine cinnamon, clove & cardamom in a spice or coffee grinder and pulse until smooth. Run through a sieve to catch any coarse bits.
4. Add 2T sugar, 2T flour and half of the spice mixture to the apples and toss well to coat.
5. Lightly grease a 9 X 9 glass dish and dump in the apples. Shake the dish a bit to level them out.
6. In a smaller bowl, combine remaining flour, sugar, oats and spice. Cut in the butter.
7. When toppping resembles rough crumbs, sprinkle evenly over apples and bake for about 45 mins.
8. Cool for 5 minutes, then serve warm with heavy cream or vanilla ice cream.
