Kick-A-- Egg Salad

my mom's egg salad
Ingredients:
6 chopped hard-boiled eggs (cover eggs in cold water in saucepan, bring to boil on high and then simmer on medium low for 15 min)
1/2 teaspoon white vinegar (or 1/2 teaspoon juice from jar dill pickles)
2 -3 tablespoons mayonnaise
1/2 teaspoon mustard
salt and pepper
red pepper flakes, 1 shake (optional)
1/2 stalk chopped celery (optional)
1 tablespoon chopped green onion (optional)
Directions:
1. boil eggs and cool, peel and chop.
2. add remaining ingredients and mash together.
3. spread on sandwich bread or toast.
4. *note - add more or less of ingredients to your taste.
