Kheer (Indian Rice Pudding)

Very simple rice pudding with a sweet and lightly spiced taste. For a heavier pudding add more rice. For a sweeter pudding add up to 1/2 C of sugar.
Ingredients:
1 quart whole milk
1/2 cup uncooked white rice
1/4 cup sugar
1/4 teaspoon cardamom
pistachios or raisins or almonds
Directions:
1. In a medium saucepan combine all ingredients and bring to a boil. Lower heat to medium and cook, stirring constantly until desired consistency. Can be served warm or cold. Will thicken slightly when cooled.
