I love Kewpie mayonnaise, but can't find it in my hometown. I've tried my best to duplicate it, and this is what I've come up with.
Ingredients:
1 egg, at room temperature
1 1/4 cups canola oil
1 teaspoon salt
1/2 teaspoon sugar
2 -3 tablespoons seasoned rice vinegar
Directions:
1. Crack egg into the bowl of a food processor.
2. Add salt and sugar, and process until well combined.
3. With the motor running, add the oil in a slow, steady stream until all is incorporated.
4. With the machine running, add the rice vinegar.
5. Cover, and refrigerate for at least an hour, before ready to use.
