Crispy zucchini
Ingredients:
2 medium zucchini, sliced 1/4 thick
1/4 cup bread crumbs
1/4 cup parmesan cheese
1/4 cup soy milk
Directions:
1. Preheat oven to 400 degrees.
2. Put milk in a bowl.
3. Place bread crumbs, parmesan, garlic, salt and pepper together in a separate bowl and stir.
4. Dip zucchini slices in soy milk then coat with crumb mixture. Lay flat on pan and bake for about 30 minutes until a little crispy. Enjoy.
