Served in old time saloons when the beer was 5 cents-along with the de-riquer pickled eggs. The spread would be too sharp made with all sharp cheddar, the rat cheese, or mild cheddar is to keep it from being to intense. Read more . Rat cheese is the cheese you set for a rat trap...you don't use your expensive aged sharp cheddar, you use the cheapest stuff possible to catch the rat, so to speak
Ingredients:
1 lb. of aged super sharp cheddar cheese
1 lb. rat cheese (bland) otherwise known as mild cheddar
3 garlic cloves
two hefty dashes of cayenne pepper
1 tsp of salt
1 1/2 tsp of powdered mustard (coleman's)
3 tbsp. worchestershire sauce
1 cup beer (approximately)
sturdy cracker of your choice.
Directions:
1. Grind the cheese with the garlic cloves.
2. MIx in seasonings.
3. Using electric mixture, add slowly just enough beer to make a paste smooth enough to spread.
4. Store in covered containers and refrigerate until needed.
5. Best served at room temperature.
6. We like triscuits, tiny pumpernickel breads or rye breads, fat pretzel sticks, or even water biscuits or melba toast is good. Something sturdy. Saltines are too wimpy.
