Salsa from the garden. Fresh and flovorful. We love it!
Ingredients:
6-8 cups of fresh tomatoes-chopped
1/2 cup chopped garlic or shallots
1-1 1/2 cups onion-chopped
1 cup minced peppers-cubanel or sweet ( we used cubanel because it's what we have in the
garden that's ready.)
1/2 teaspoon cumin
1 teaspoon cilantro (dry)
1/2 cup of vinegar to start-more or less to taste
a few squirts of lime juice
2 tablespoons of kosher salt
1 tablespoon hot sauce or 1-2 hot peppers ( take out the seeds if you don't want so much fire)
optional stuff
add scallions to taste
you can use minced celery instead of green peppers -it adds crunch.
