6-8 cups of fresh tomatoes-chopped |
1/2 cup chopped garlic or shallots |
1-1 1/2 cups onion-chopped |
1 cup minced peppers-cubanel or sweet ( we used cubanel because it's what we have in the |
garden that's ready.) |
1/2 teaspoon cumin |
1 teaspoon cilantro (dry) |
1/2 cup of vinegar to start-more or less to taste |
a few squirts of lime juice |
2 tablespoons of kosher salt |
1 tablespoon hot sauce or 1-2 hot peppers ( take out the seeds if you don't want so much fire) |
optional stuff |
add scallions to taste |
you can use minced celery instead of green peppers -it adds crunch. |
