Kat's Chicken Tortilla Soup

Muy Bueno - spicy soup for a low-cal meal
Ingredients:
2 cups of chicken broth
2 cups red chili sauce
4 oz of chicken breast
1 white onion
2 cloves of garlic
1 carrot
3 celery stalks
1/2 cup of cilantro
2 corn tortillas
1/2 avocado
1 tsp salt
2 tsp pepper
Directions:
1. In a soup pot bring broth to boil. Add red chili sauce (such as las palmas) and bring to a simmer.
2. Spray sauté pan with non-stick cooking spray.
3. Cut chicken into bite sized pieces and cook until brown.
4. Chop onions and garlic add to sautéd chicken until onions are carmelized.
5. Add chicken mixture to chili/broth soup pot.
6. Dice carrots and celery and add to soup.
7. Simmer for 20 minutes.
8. Strip corn tortillas place on cookie sheet and toast in oven (about 10 minutes at 350º)
9. Serve soup and garnish with toasted tortilla strips, diced avocado and chopped cilantro.
