I had dethawed a whole chicken the other night. Katie decided to come over and help me decide what to do with it. She said she thought honey and pineapple sounded yummy. I told her to look up Hawiian Chicken because that sounded just like what she wanted. We never found a recipe to suit our needs for the time so we threw caution to the wind and made this. The chicken came out moist and tasty! The glaze can be halved.
Ingredients:
1 whole chicken (cut into pieces)
4 garlic cloves
3 teaspoons salt
1 teaspoon black pepper
1 egg yolk
4 tablespoons honey
4 tablespoons brown sugar
8 tablespoons margarine (melted)
1 (16 ounce) can pineapple chunks (we think rings would go great here)
20 maraschino cherries
Directions:
1. cut up chicken.
2. place in a greased 13 x 9.
3. preheat oven to 325.
4. rub salt and pepper on chicken.
5. melt margarine in a bowl.
6. add honey (we used two different kinds).
7. stir in brown sugar and egg.
8. mince garlic and add.
9. drain pineapple reserving juice.
10. drizzle a spoonful of juice on each peice of chicken.
11. do the same with glaze.
12. cut cherries in half.
13. add half the pineapple and cherries.
14. place chicken in oven for 30 min.
15. remove and drizzle more juice and sauce.
16. add the rest of the fruit.
17. cook 20 more minutes.
18. turn chicken and cook another 20.
19. remove and enjoy!
