My late Aunts fantastic Macaroni Salad recipe. Goes great with chicken or steak. You can substitute the Mayo for Light or Fat Free for a healthier salad.
Ingredients:
1 cup mayonnaise
1 tablespoon mustard
1/4 cup sweet relish
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups elbow macaroni, cooked and drained
1 cup finely chopped green pepper
1 cup chopped celery
1/2 cup finely chopped onion
3 hard-boiled eggs, chopped
Directions:
1. Combine the first 5 ingredients in a large bowl.
2. Add the rest of the ingredients to the bowl.
3. Toss and chill.
