Here's my favourite banana bread recipe slightly altered from extraveganza, a much used book in our kitchen.
Ingredients:
1 cup whole wheat flour
1 cup unbleached white flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp fine sea salt
2 tsp cinnamon
1/2 c vegetable oil
1/2 c sugar
1 tsp vanilla
1 c. vanilla soy milk
2 bananas, mashed
1 t cider vinegar
1/3 cup raw pumpkin seed
