By Polly Pitchford, Full Spectrum Health? The large Kamut grain has a chew to it similar to ground beef. Kamut is not in the DB so durum was substituted. Calories, fat and fiber calculated by the analyzer are somewhat undercounted so are reported here: Calories 273, Total Fat 4g, Saturated Fat 1g, Sodium 1452mg, Total Carbs 51g, Dietary Fiber 13g Protein 12g. Kamut grain (a trademarked wheat grain not in the DB), water, pinto beans, onion, green pepper, chili powder, salt, tomato sauce, water, stewed tomatoes, Tabasco sauce cvt
Ingredients:
1 cup kamut grain, soaked overnight, drained
3 cups water
2 cups cooked pinto beans
1 large onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
3 teaspoons chili powder
2 teaspoons salt (or less, sodium count is very high!)
2 cups tomato sauce
1 cup water
15 ounce stewed tomatoes
1/4 tsp (check volume of 4 drops) tabasco sauce
Directions:
1. Bring soaked Kamut and water to a boil in a large pot. Reduce heat to medium-low and simmer, covered, until all water is absorbed, about 30-40 minutes.
2. Add remaining ingredients in with Kamut. Simmer for 1 1/2 - 2 hours.
