Found a similar recipe somewhere else but substituted in the pears over apricots or other dried fruit. I like the crispness better.
Ingredients:
120 g kale
1/3 cup almonds
1 medium avocado
1 medium pear
1/3 cup black beans
2 tablespoons olive oil
3 tablespoons red wine vinegar
1 teaspoon salt
1 ounce parmesan cheese
Directions:
1. Soak Kale, remove stems, and tear into small pieces. Add everything else and mix together, leaving avocado for last, just putting it on top with a pinch of salt.
