Did you think that kale was just for decorating the platter? Well, it's not!Here is a salad that should be made ahead of time for the flavors to meld.
Ingredients:
2 bunches kale
1 large red onion, thin slice
3 garlic cloves, pressed
8 brown button mushrooms, tops only sliced (can use white button)
8 cherry tomatoes, cut in half
1 small tart apple, cut into matchsticks
1/2 cup extra virgin olive oil
2 tablespoons dijon mustard
1/4 teaspoon kosher salt (optional)
3 limes
fresh ground pepper (optional)
Directions:
1. TO MAKE:.
2. Wash kale well and dry between towels. Remove tough stems.
3. Slice or tear apart and place in salad bowl.
4. In small bowl, whisk together, garlic, mustard, salt, pepper, and olive oil. Add the juice of one lime to this and whisk to make dressing.
5. Place onions, mushrooms and apple with kale greens.
6. Pour dressing over and toss.
7. Refrigerate until ready to serve.
8. TO SERVE:.
9. Add sliced tomatoes just before serving.
10. Squeeze two limes over salad and toss.
