Kale And Potato Soup With Homemade Turkey Sausage

Very loosely adapted on kale and potato soup recipes I've seen all over the web. It was very easy and delicious, and even healthy!
Ingredients:
homemade turkey sausage
1 pound ground turkey
fresh ground black pepper to taste
kosher or sea salt to taste
mixed italian dried herbs
garlic powder
crushed fennel seed
hot pepper flakes
2 tablespoons dry white wine
olive oil
1 onion, diced
2 ribs celery (including some leaves) , diced
4 garlic cloves, diced
1 bay leaf
6-8 cups chicken stock
3 medium red potatoes, cubed
2 cups kale, ribs removed and leaves cut into 1 inch pieces
1/4 cup minced parsley
Directions:
1. Combine turkey, spices and wine in a dish and refrigerate for 1-2 hours for flavors to combine.
2. Heat olive oil in soup pot and saute onion and celery until translucent.
3. Add turkey sausage and garlic and cook over medium-high until sausage is almost cooked through and slightly brown.
4. Add potatoes and kale and saute for 3-5 minutes until lightly coated with oil and just beginning to wilt.
5. Add stock and bay leaf.
6. Bring to a slow simmer and cook for 30-45 minutes until kale is softened, potatoes are cooked, and flavors are combined.
7. Add parsley and serve.
