Also known as Korean-style or cross-cut short ribs. We fell in love with this bone-in cut at Korean BBQ joints and are therefore partial to its Korean name (and flavor possibilities). Buy 2 pounds of cross-cut short ribs, each sliced lengthwise about 1/3 thick.
Ingredients:
2 pounds of cross-cut short ribs, each sliced lengthwise about 1/3 thick
scallions, thinly sliced
Directions:
1. Place short ribs in a resealable plastic bag; pour Korean BBQ Marinade over. Seal bag; turn to coat and chill 3 hours. Let come to room temperature before grilling. Drain and pat dry with paper towels.
2. Build a medium fire in a charcoal grill, or heat a gas grill to medium-high. Grill 2-3 minutes per side, or until just cooked through.
3. Transfer to a platter and let rest 5-10 minutes. Garnish with thinly sliced scallions.
