Lean turkey meatballs with a homemade tomato sauce... Recipe makes thirty small turkey meatballs or 15 larger ones. Serving size = 2 small meatballs = 106 calories, for easy calculation.
Ingredients:
1 1/2 pounds ground turkey, 93% lean
1 egg
10 g worchestershire sauce (2 teaspoons)
1/2 cup plain dried breadcrumbs
1 large onion
1 small green pepper
2 tomatoes
8 oz (one small can)no-salt-added tomato sauce
1 tablespoon balsamic vinegar
1 teaspoon garlic
Directions:
1. Mix turkey, egg, Worcestershire sauce, breadcrumbs and any other desired seasonings (salt, pepper, dried herbs) in a large bowl.
2. Heat oven to 400 degrees.
3. Shape turkey into 30 walnut-sized meatballs, or 15 larger ones and place them on an oven tray (no need to add oil...)
4. Bake turkey for 10 minutes, then turn and bake for another ten minutes. Remove from oven and spread them out in a baking dish.
5. While turkey is baking, make the sauce. Chop vegetables and cook all remaining ingredients in a saucepan while the turkey meatballs bake.
6. Blend the sauce with a handblender to make it smooth, and pour it over the meatballs.
7. Bake meatballs and sauce for 30 minutes, or until they are done to your taste, and serve with the accompaniment of your choice.
