This makes a flavorful potato without the added fat of butter and sour cream. From the cookbook, Ralph & Kacoo, A Taste of Louisiana. Ralph & Kacoo's is a seafood restaurant with locations in Louisiana and Texas.
Ingredients:
1 potato
1 slice onion
garlic salt
pepper
1 slice bell pepper
1 tablespoon chicken broth (optional)
Directions:
1. Cut potato in half lengthways.
2. Put slice of onion between potato halves. Sprinkle with garlic salt and pepper. Add slice of bell pepper.
3. Wrap in foil and bake for 1 hour.
4. For a moister potato, add 1 tablespoon chicken broth.
