Junior League - Spicy Spinach Dip

Spicy Spinach Dip
Ingredients:
3 (10 ounce) packages frozen chopped spinach, thawed, drained
8 ounces cream cheese, softened
8 ounces grated parmesan cheese
1 cup mayonnaise
2 tablespoons dried minced onions
1 tablespoon minced fresh garlic
2 teaspoons dried basil
2 teaspoons cayenne pepper
1 lb shredded monterey jack colby blend cheese
Directions:
1. Press the excess moisture from the spinach. Combine the cream cheese, parmesan cheese, mayonnaise, onion, garlic, basil and cayenne pepper in a mixing bowl and beat until blended. Beat in (if your mixer has the capacity) or still in the spinach and Monterey jack/Colby cheese. Spoon into a 2-quart baking dish.
2. Bake at 375 degrees for 45 minutes or until brown and bubbly. Press the top lightly with a paper towel to remove excess oil. Serve warm with tostada chips and/or toasted bread rounds. You may freeze for future user before baking.
3. Serve as an entrée by spreading the spinach filling on corn tortillas. Roll to enclose the filling Arrange seam side down in a baking dish and sprinkle with shredded cheese. Bake until heated through.
