Junior League - Grilled Chicken and Mango Salsa

A little spicy and a little sweet - yummy recipe!
Ingredients:
6 cups chopped ripe mangoes
1 cup finely chopped red onion
1/2 cup chopped cilantro
6 tablespoons lime juice
2 large cloves garlic, minced
4 jalapeno chiles, seeded and minced
1/2 teaspoon red pepper flakes
salt
24 small boneless chicken breasts
3/4 cup olive oil
1/2 cup white wine vinegar
3 tablespoons ground ginger, root
3 tablespoons coriander
1 tablespoon cumin
pepper
cilantro
Directions:
1. Salsa: Mix all ingredients and chill.
2. Chicken: Mix all ingredients and pour over chicken. Reserve 1/4 cup of marinade. Marinade for up to 2 days. Drain and grill chicken over medium heat. Pour salsa over chicken on serving plate. Garnish with cilantro.
