This is another one of those recipes that you can tweak. You could substitute peanut butter chips for all or half of the chocolate, use different kinds of nuts, or add raisins, etc.
Ingredients:
1 1/4 cup all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter or margarine, softened
1 cup sugar
1 egg
1 teaspoon vanilla
2 cups crispy rice cereal
2 c. semi-sweet chocolate chips
1 c. coconut
1c. walnuts or pecans, finely chopped
Directions:
1. Preheat oven to 350°F. Lightly grease cookie sheets.
2. Stir together flour, baking soda and salt in a small bowl; set aside. In large mixing bowl, cream butter and sugar until light and fluffy. Add egg and vanilla; beat well.
3. Gradually add flour mixture. Stir in rice cereal, chocolate chips, coconut, and nuts.
4. Drop by teaspoonfuls onto prepared cookie sheet. Bake 11-13 minutes or until lightly browned. Remove immediately from cookie sheets onto wire rack. Cool completely.
