My ex seldom cooked, but used to often make this wonderful salad. I like to make a double recipe, and serve with a slotted spoon for several days. The juice that is left after several days of marinating is a delicious dressing to serve over other salads. This is perfect when summer tomatoes are in season! Goes great with any grilled meats.
Ingredients:
4 -5 tomatoes
2 green bell peppers
1 large red onion
3/4 cup olive oil
1/4 cup red wine vinegar
1 teaspoon minced garlic clove
2 teaspoons sugar
1 1/2 teaspoons salt
1/4 teaspoon pepper
7 -8 fresh basil leaves (optional)
Directions:
1. Chop the tomatoes, peppers and red onion into bite sized pieces. Combine the olive oil, vinegar, garlic, sugar, salt and pepper and pour over the vegetables. Chop the basil and add. Chill for at least 2 hours, but it gets better the longer it marinates.
