From Jillian Michaels' book Making the Cut. A healthy pancake breakfast!
Ingredients:
3 large eggs
3/4 cup low-fat cottage cheese
1/4 cup whole-wheat flour
Directions:
1. Preheat griddle to 380 degrees F.
2. Separate egg yolks from egg whites.
3. Beat egg whites until peaks form. Beat eggs yolks until thick.
4. Add cottage cheese to egg yolks and beat well.
5. Stir in flour.
6. Fold in egg whites.
7. Pour batter onto griddle, each hotcake should be 5 in diameter.
8. Cook 2 minutes on each side.
9. Serve and enjoy!
