Jillian's Fish-The Biggest Loser

This is pretty much what I saw Jillian show the last four girls how to prepare a delicious, low-calorie fish dinner. It turned out quite well. She never specified what kind of fish, so I just picked up a box of blue haddock (unbreaded) filets from Schwans and tried that. It did look white, so I'm sure you can vary depending on your preference.
Ingredients:
4 blue haddock fillets
1 tomato, diced
1 cup parsley, chopped
1 cup shallot, chopped
1 garlic clove, chopped
1 lemon
Directions:
1. Spray frying pan with Pam. Add chopped vegetables and parsley. Squeeze fresh lemon over them. Spray Pam onto glass baking dish. Place fish filets onto them and bake 5-10 minutes or as directed. While cooking, saute vegetable mix for 4-5 minutes. Once fish is cooked, place onto plates and drizzle vegetable mixture over the top. Viola! Yummy and low-cal. :-).
