Jicama-Radish Spinach Salad

Ingredients:

  • 1 package (6 oz) fresh baby spinach
  • 1-1/2 cups julienned jicama
  • 1/2 cup thinly sliced red onion
  • 1/4 cup orange juice
  • 2 tbsp honey
  • 2 tbsp olive oil

Directions:

  1. In a large salad bowl, combine the spinach, jicama, onion and radishes. In a small bowl, whisk the orange juice, honey, oil and mustard. Pour dressing over salad and toss gently to coat. Yield: 6 servings.
