Ingredients:
1 medium jícama, peeled and cut into 1/4-inch cubes
1 cup preshredded green cabbage
1/4 cup finely chopped red onion
1/3 cup fresh lime juice (about 2 large limes)
2 teaspoons olive oil
1 1/2 teaspoons sugar
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions:
1. Combine all ingredients in a medium bowl, tossing well to coat. Serve at room temperature or chilled.
