Ingredients:
3/4 lb jicama, cut into 1 1/4 by 1 1/2 inch strips
1 medium cucumber, peeled and thinly sliced
1 small red onion, halved and thinly sliced
3 navel oranges, peeled and cut into bite sized pieces
1 head romaine lettuce, shredded
1/4 cup vegetable oil
3 tablespoons rice vinegar
1/2 teaspoon salt
Directions:
1. In a large bowl, combine jicama, cucumber, red onion, oranges and lettuce. Toss lightly to mix.
2. In a small bowl, whisk together oil, vinegar and salt. Pour dressing over salad and toss to coat evenly. Serve at once.
