Oh my darlin', oh my darlin'... I just adore clemetines, and it's clementine season now. I found this in the Cooking Light newsletter and it's luscious!
Ingredients:
3 tablespoons sugar
1/4 cup white wine vinegar
1/2 cup grand marnier (orange-flavored liqueur)
4 cups clementines, in sections (about 12 clementines)
1 tablespoon nonfat milk
1 (8 ounce) carton low-fat vanilla yogurt
mint sprig (optional)
Directions:
1. Combine sugar and vinegar in a small, heavy saucepan.
2. Bring to a boil.
3. Cook 6 minutes or until amber brown.
4. Remove from heat and stir in the liqueur.
5. Place the clementine sections in a large bowl.
6. Pour the sugar mixture over the sections.
7. Cover and chill 2 hours, stirring occasionally.
8. Combine the milk and yogurt, stirring with a whisk.
9. Spoon the clementine mixture into individual bowls or stemmed glasses, and top with the yogurt mixture.
10. Garnish with mint, if desired.
