Jetts Orange Cranberry Nut Bread

A good friend had given me a whole case of cranberries ... sooooo when you have a heap of cranberries, you make cranberry nut bread! AND I found 4 small loaf pans on sale last week. Hoping you will enjoy this recipe! Read more ! Make small loafs and wrap in pretty paper for a great gift!
Ingredients:
1 1/2 cups coarsely chopped cranberries (tossed with 1 teaspoon flour)
2 cups all purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 tablespoon grated orange peel
3/4 cup orange juice
2 tablespoons oil
1 egg (slightly beaten)
1 1/2 cups chopped pecans (optional)
4 small loaf pans or 1 large size loaf pan
Directions:
1. Preheat oven to 350 degrees F.
2. Grease the loaf pans
3. Place rack in the middle of the oven.
4. In a large bowl:
5. Add dry ingredients and mix well
6. Add egg and orange juice, mixing well
7. Combine the cranberries and nuts to the mixture.
8. (HELPFUL HINT)
9. Toss the nuts and cranberries with a teaspoon of flour to prevent them from sinking to the bottom of the bread.
10. Bake for approximately 40 minutes or until done.
11. I also baked four loaves and forgot to put the egg in the mixture ... it came out fine ;-)
