This chocolate cake recipe is from my Grandma who would bake this whenever we would come visit. My mom copied this recipe from a neighbor's cookbook back in 1940.
Ingredients:
2 - 1 oz. squares unsweetened chocolate
1 cup boiling water
1 stick margarine
2 cups granulated white sugar
2 cups plain all-purpose flour
1 1/2 teaspoons baking soda
2 teaspoons baking powder
1/2 cup buttermilk
2 eggs(beaten)
powdered sugar for glaze/frosting
water
Directions:
1. Grease and flour 2 - 8 inch cake pans. Line pans with waxed paper.
2. Place the squares of chocolate, boiling water and margarine in a saucepan. Heat until chocolate is glossy. Place mixture in a bowl. Add granulated sugar and sift in the flour, baking soda and baking powder. Mix alternately with the buttermilk. Mix well. Add eggs. Mix well.
3. Pour batter into prepared cake pans. Place cake pans in the center of the oven making sure pans are not touching. Bake for 25 - 30 minutes or until toothpick test shows clean. Mix about 2 cups powdered sugar and water to make a glaze. Remove cakes from the pan and let cool. Don't forget to remove the wax paper! Place one of the cake layers on a plate and put the glaze/frosting over it. Place the other cake over that and pour on the glaze. Enjoy!!
