a quick potatoe salad, a bit lower in calories than those made with mayonaise
Ingredients:
3 lbs red potatoes
12 oz green beans
2/3 cup olive oil
3 tbsp rice wine vinegar
2 oz basil
1/12 tsp dijon mustard
3 cloves garlic, chopped
1 pint cherry tomatoes, halved
1 to 2 cups red onion sliced thinly
3 1/2 cups red cabbage
3 tbsp capers
1 tsp sald
Directions:
1. Cook red potatoes until tender. Add green beans halfway through cooking the potatoes.
2. Drain.
3. Add remaining ingredients and mix.
