Shish Taouk style chicken. Prep time does not include marinating time. This goes great with my lentil & rice recipe. Goes great with my yogurt garlic sauce.
Ingredients:
6 medium chicken breasts, cut into chunks
1 cup fat free greek yogurt
1 (5 1/2 ounce) can tomato paste
1/4 cup olive oil
6 tablespoons lemon juice
3/4 teaspoon paprika
1/2 teaspoon cumin
2 tablespoons oregano
3 garlic cloves, minced
1 tablespoon dried onion flakes
1/4 teaspoon liquid smoke (optional)
Directions:
1. Mix all of the ingredients for the chicken skewers in a large freezer bag and marinate over night or at least 3 hours. Thread Chicken pieces onto 6 wooden skewers that have been soaked. Grill 10 to 15 minutes on medium heat or until no longer pink.
