Nice when fresh strawberries are in season, or peaches. This makes up into a pretty dessert, when your finish putting this together, you can sprinkle it lightly with powdered sugar and put a dollop of whipped cream ontop in the center and place a whole strawberry in the center of it.
Ingredients:
4 egg yolks
1/4 cup sugar
1/2 teaspoon vanilla
4 egg whites
1/2 cup sugar
3/4 cup cake flour
1/4 teaspoon salt
1 teaspoon baking power
Directions:
1. Beat egg yolks til thick and lemon colored; gradually beat in 1/4 cup sugar and vanilla.
2. Beat egg whites till almost stiff. Fold yolks into whites then add sifted dry ingredients, folding in carefully.
3. Bake in wax paper lined 10 1/2 x 15 pan at 375* 12 minutes. Loosen sides and turn out onto towel sprinkled with powdered sugar. Remove wax paper Trim crust. Roll quickly with fresh sheet of wax paper on inside of roll Wrap in sugared towel; cool Unroll, remove paper spread with jelly or other favorite filling (Whip Cream and fruit, Lemon Curd, etc) Roll up again and refrigerate. I use Whip Cream and fresh strawerrys in, Enjoy!
