I know it's not vegetarian, This is a recipe my mom used to make for us for hot summer meals. sometime as a side dish, sometime in a pie shell.
Ingredients:
16 oz. cottage cheese (small curd, any style regular, lo fat or fat free)
1 box jello (your choice in flavor, sugared or sugar free)
1 large can crushed pineapple (drained if using in a pie shell)
1 container of cool whip ( regular, low fat, lite, whatever)
Directions:
1. In a large bowl mix pineapple (drained or not) and cottage cheese.
2. sprinkle jello over this until softened (darkens).
3. Then mix well.
4. mix in cool whip
5. Chill til set
