Jello-o Buttermilk Salad

Looks good served on lettuce with a small dollop of low-fat mayonnaise. Crackers can be added.
Ingredients:
1 large sugar free jell-o package (orange or cranberry is good choice)
2 cups low-fat buttermilk
1 (12-ounce) low-fat cool whip
1 (15-ounce) crushed pineapple in its own juice
1/2 cup (or more) toasted pecans, whole or pieces
Directions:
1. Mix Jell-o in two cups boiling water.
2. Add pineapple with its juice; let cool.
3. Add buttermilk, low-fat Cool Whip and pecans; mix well.
4. Pour into a large dish, and refrigerate to firm up.
