A quick drop biscuit with a bit of jelly in the center. I made them once and they become a request from my daughter and husband.
Ingredients:
2 c. flour
4 tsp. baking powder
2 tsp. sugar
1/2 tsp. salt
1/2 tsp. cream of tartar
1/2 c. vegetable shortening
3/4 c. milk
1/3 c. jelly, approximately (i've also used jam and preserves)
Directions:
1. Preheat oven to 450 F. Prepare baking sheet with parchment paper or by greasing.
2. Combine all dry ingredients and cut in shortening with a pastry cutter or two knives until mixture resembles coarse crumbs.
3. Add milk, stirring quickly with fork until just mixed.
4. Drop by rounded tablespoons onto prepared baking sheet.
5. Made a deep thumbprint in the center of each biscuit. Fill each thumbprint with a 1 tsp. of jelly (or jam or preserves).
6. Put in preheated oven and bake for 10-12 minutes or until biscuits are brown.
