Jeff's Hash Brown Casserole

This is a delicious and simple comfort casserole. It is easy to add new ingredients or tweak the originals to make it a little different of make it more to your own tastes. I don't add seasonings, because my Husband and I can't agree on how it should be seasoned, so we season once it's on the plate. We often change up the cream soup and cheeses. 12/29/08- Recipe Zaar changed sour cream to cream cheese. Fixed.
Ingredients:
32 ounces frozen hash browns
1 small onion
1 (10 1/2 ounce) can cream of mushroom soup
16 ounces sour cream
8 ounces cheddar cheese (shredded or preferred flavor)
seasoning (optional)
jalapeno (optional)
cubed ham (optional)
Directions:
1. Pre-heat oven to 350 degrees.
2. Combine sour cream, soup and onions. Mix well.
3. Fold in the hashbrowns.
4. Fold in 3/4 of the cheese.
5. Place into 9 by 13 baking dish, smooth mixture and top with remaining cheese.
6. Bake for 45 minutes or until the edges of the cheese begin to brown.
