Japanese Tonkatsu Sauce

Japanese dipping sauce for sesame chicken katsu
Ingredients:
1 cup catsup (tomato sauce)
1/2 cup worcestershire sauce
1/2 cup sake (japanese rice wine)
2 tablespoons ginger, finely diced
2 tablespoons garlic, finely diced
1/4 cup sugar
1/4 cup mirin (japanese sweet cooking sauce)
Directions:
1. Put all ingredients into a saucepan and bring to a boil over medium heat stirring occasionally
2. Reduce to a simmer for 25-30 minutes skimming any foam that rises to the top
3. To serve warm, serve immediately
4. Will keep refrigerated for 4 weeks
5. Reheat when reusing (microwave or over gentle heat until it is warmed through)
