I don't remember where I got this recipe but it was about 1994 and we still make it. It is so good and different.
Ingredients:
1 head lettuce
2 lbs chicken, boiled and cut
3 ounces mai fun rice noodles, 30 seconds in hot oil
1 bunch radish, sliced
4 green onions, sliced
slivered almonds, toasted
sesame seeds, toasted
1 teaspoon sesame oil
1/2 cup seasoned rice vinegar
2 tablespoons canola oil
2 teaspoons sugar
2 teaspoons salt
tomato
pepper
Directions:
1. Mix all ingredients just before serving.
