Japanese Pork Sate

Ingredients:
1 lb boneless pork loin
1/2 cup minced onion
2 tablespoons peanut butter
2 tablespoons lemon juice
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon vegetable oil
1 clove garlic, minced
1 dash hot pepper sauce
hot cooked rice (optional)
Directions:
1. Cut pork into 1/2-inch cubes; place in shallow dish.
2. Combine all remaining ingredients except rice in blender or food processor; process until smooth.
3. Pour over pork.
4. Cover and marinate in refrigerator 10 minutes.
5. Prepare grill.
6. Thread pork onto skewers.
7. (If using bamboo skewers, soak in water 30 minutes to prevent burning.) Place skewers on grid.
8. Grill over medium-hot coals 10-12 minutes or until pork is nicely browned and barely pink in center, turning occasionally.
9. Serve with rice, if desired.
