Japanese Fruit Pie

One of the simplest pie recipes I have ran across! This recipe is courtesy of Hazel S. of Arkansas. She won 1st place in a dessert contest with this little gem!! Try it, you will like it!!
Ingredients:
3 eggs, well beaten
1 cup - granulated sugar
1 stick (1/2 cup) - unsalted butter
1 tablespoon - lemon juice
1/2 cup - raisins
1/2 cup - chopped nuts (your choice)
1/2 cup - shredded coconut
1 teaspoon - pure vanilla
Directions:
1. Preheat oven to 350'.
2. Mix ingredients in ORDER GIVEN and pour into unbaked 9 pie shell.
3. Bake at 350' for 40 to 45 minutes!!
4. That's it!! Simple and Easy!!!
5. Note: Why this is called Japanese I have no clue!! :-)
