Japanese Carrot Salad Dressing

It's not necessarily FOR carrots, it's made WITH carrots!
Ingredients:
2 garlic cloves, crushed
1/2 onion, pureed
1 carrot, grated
2 1/2 tablespoons gingerroot, grated
1/2 teaspoon mustard powder
2 teaspoons soy sauce
2 teaspoons apple juice
1 teaspoon sesame oil
3/4 cup salad oil
1/2 cup rice vinegar
1 cup mayonnaise (optional)
Directions:
1. Puree the garlic, onion, and carrot until very fine.
2. Add remaining ingredients and puree until well-mixed.
3. If you are looking for a creamier dressing, add the mayonnaise and mix by hand.
4. Chill well before using.
